I recently had a wonderful lunch with a friend where she introduced me to edible lavender. She had made the tastiest lavender sugar cookies and I could not believe I’d never had (or really heard of) edible lavender before.
Well she was all out, or so she claimed .. so I had to order my own.
After a little searching I found Paula’s Garden and excitedly informed my husband that I was expecting a lavender scented package in the next couple of days. It arrived quickly but it didn’t have the strong smell of lavender that I was expecting .. but what do I know? It was my first time even touching the stuff, maybe it wasn’t supposed to smell.
Fast forward to baking and there it was as soon as I opened the bag, the subtle beautiful lavender scent I had been looking for. Once the treats started baking it filled the house and gave these lemon lavender treats a wonderful taste (I ‘sampled’ several, for quality control of course).
As an added bonus lavender is supposed to be calming and with the way they chomped them down my dogs should be the calmest pups on the block.
1 Lemon (juiced and zested)
1 tablespoon Culinary Lavender
2 cups Whole Wheat Flour
1/2 cup Milk
Preheat oven to 350 degrees fahrenheit.
Mix lemon juice, lemon zest, lavender, milk and egg until well combined. Slowly add flour and knead until all ingredients are mixed. Roll dough out on floured surface 1/4 inch thick. Cut into shapes with the cookie cutter.
Bake for 10 to 15 minutes.
Cool and refrigerate.
