A lot of people have asked me about this book, The Dog Ate It by Linda West Eckhardt and Barbara Bradley with Judy Kern. It was published a while back, in 2006, so it was a little hard for me to find but I finally came across it and I can see why it’s so popular. It’s full of great recipes and a lot of good information, there is an issue with the fact that there is a recipe that calls for raisins but the authors have made a statement that it was an error in the part of the publisher and it should have been craisins. Some of the recipes also contain garlic but it can be left out.
All in all it’s an informative book with a lot of good recipes.
1 cup unsweetened crushed pineapple, drained, juice reserved
1/4 cup Olive Oil
1/4 cup Honey
1 large Egg
1 teaspoon Vanilla Extract
2 cups Whole Wheat Flour
1 1/2 teaspoon Baking Powder
1/4 teaspoon Baking Soda
1/2 cup Chopped Walnuts
Preheat oven to 350 degrees fahrenheit.
In a large bowl mix together pineapple, olive oil, honey, egg and vanilla. Add the whole wheat flour, baking powder, baking soda and walnuts and stir well to combine adding the pineapple juice as needed to form a soft dough.
Drop the dough on a greased cookie sheet 1/2 inch apart and bake for 20 minutes or until browned.
Cool and refrigerate.
