2 1/4 cups Whole Wheat Flour
2 1/2 teaspoons Baking Powder
2 teaspoons Ground Cinnamon
1/4 teaspoons Salt
1 1/2 cups packed Brown Sugar
3/4 cup Butter, softened (1 1/2 sticks)
1 teaspoon Vanilla Extract
2 large Eggs
1 cup Pumpkin Puree
Preheat oven to 350 degrees fahrenheit. Grease a 15 x 10 inch jelly roll pan.
In a medium bowl mix whole what flour, baking powder, cinnamon and salt.
Using a mixer beat brown sugar, butter and vanilla extract. Add eggs one at a time, beating well after each addition the beat in pumpkin mixture. Gradually add the flour mixture to the egg mixture.
Spread the batter into your greased jelly roll pan and bake for 20 to 25 minutes or until a wooden tooth pick inserted in the middle comes out clean. Cool and cut into 2 x 4 inch bar.
