Chicken Sweet Potato Brown Rice

Ingredients

  • 1 chicken breast cooked and chopped
  • 1 cup cooked brown rice
  • 1/2 cup chopped spinach
  • 1/2 cup apple sauce
  • 1/2 cup grated sweet potato
  • 2 tablespoons brown rice flour

Instructions

  • Grease a metal mini-muffin pan and use a silicon pan.
  • In a large bowl mix all ingredients until well combined.
  • Spoon mix into prepared muffin pan and press the tops so they are well packed.
  • Bake for 20 to 25 minutes, until browned at the edges.
  • Allow to cool before serving.
