Add all filling ingredients to a medium pot and bring to a simmer. Turn heat to low and simmer for about 10 minutes or until dried fruits are slightly softened.
Let cool completely.
Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper or a silicone baking mat.
In large bowl, combine all crust ingredients and mix until well combined.
Knead dough into ball and roll onto a floured surface 1/4 inch thick, cut into 4 inch by 5 inch rectangles.
Spoon filling ingredients into the middle of the dough rectangle, top with second rectangle.
Press edges of dough with a fork to seal,
Transfer pies to prepared baking sheet, cut tops to vent.
Bake for 20 to 25 minutes until lightly browned.
