ask the chef :: how to zest

Zest is the rich outermost part of the rind of an orange, lemon, or other citrus fruit, which can be used as flavoring. Now removing the zest from the fruit,and not your finger, can sometime be tricky.

Ingredients
Citrus fruit of choice

Directions
Scrub the outside of the fruit then rinse it well and dry it with a paper towel.
Applying firm pressure, drag the citrus fruit over the teeth of the grater to remove the colored part of the peel. When you reach the white part beneath the zest, rotate the fruit and continue removing the colored part of the peel until the fruit is completely zested.
