Clean and trim the livers of any excess fat and connective tissue.
In a large sauce pan boil chicken livers in water for approximately 10 minutes.
Add apple and thyme to chicken livers and allow to boil an additional 5 minutes.
Reserving some of the water and allow to cool.
Once cooled place livers, apple and thyme in a food processor or blender.
Blend until smooth, using reserved water to thin when necessary.
Line a container with plastic wrap and pour in mixture.
Allow to chill over night and serve.
